3 c cooked brown rice
1 tsp olive oil
1/2 onion, chopped
1 bell pepper, chopped
1 Serrano pepper, chopped (optional)
1 clove garlic, minced
Salt
Pepper
4 oz tomato sauce
Lightly brown onion, peppers, and garlic in oil. Add all other ingredients. Simmer for 10 minutes.
